Veg Biryani

Ingredients  

  • Basmati rice
  • onions , cauliflower, potatoes, carrot and beans(chopped)
  • soy chunks (optional)
  • green peas (frozen)
  • green chili
  • garam masala
  • biryani masala
  • ginger garlic paste
  • 2 cardamons (elaichi)
  • 2 cloves (laung)
  • 1 cinnamon (dalchini)
  • bay leaf (tej patta)
  • Jeera
  • Butter/ ghee
  • Cashew nuts & Almonds (for garnishing)

Directions

  • Soak 2 cups of rice in water for 10-15 minutes.
  • Take a pressure cooker and add oil. heat it for few minutes.
  • Add jeera , cardamon, cloves, cinnamon, bay leaf. Saute for 1-2 minutes.
  • Add chopped onions and green chilies. Fry until golden.
  • Add ginger garlic paste and mix well.
  • Add all the veggies. Saute for 3-5 minutes.
  • You can also add soy chunks. To add soy chunks soak them in hot water until soft. squeeze up the water and add.
  • Add 1/2 tbsp garam masala and mix well.
  • Add biryani masala and turmeric powder.
  • Add 4.5 cups of water and salt.
  • Add almonds and cashew nuts.
  • Stir well and bring the water to a rapid boil.
  • Close the pressure cooker lid and cook for about 5 minutes(2-3 whistles)
  • Serve immediately !!!
