Sprouted Poha

The health benefits of sprouts make up quite an impressive list, and they include the ability to improve the digestive process, boost the metabolism, increase enzymatic activity throughout the body, prevent anemia, help with weight loss, lower cholesterol, reduce blood pressure, prevent neural tube defects in infants, protect against cancer, boost skin health, improve vision, support the immune system, and increase usable energy reserves.

Sprouts contain a significant amount of protein and dietary fiber, as well as vitamin K, vitamin C, vitamin A, and riboflavin. In terms of minerals, sprouts contain manganese, copper, zinc, magnesium, iron, and calcium. Many of these component nutrients increase dramatically as the sprout continues to develop. Along with all of those components, sprouts are also a rich source of enzymes that are essential for health.

Ingredients

sprouts (1 cup)
Beaten rice / Poha  (1.5 cup)
spices
onions(chopped)
green chilies (chopped)
coriander leaves (chopped)
salt & sugar
oil


Directions

Wash and soak the sprouts for overnight. Take a pressure cooker and add oil & heat it for few minutes. Add 1/2 tbsp jeera (cumin seeds) ,sprouts and salt. Stir well and close the pressure cooker lid and cook for about 2-3 minutes (1 whistle)

Place the beaten rice on a sieve and wash lightly. Drain and leave aside for 10 minutes. Heat oil in a pan and add mustard seeds. when the seeds crackle add green chilies and onions. Fry till the onions become golden-pink. Add 1/2 tbsp turmeric powder, 1/2 tbsp red chili powder, and salt and sugar. Add poha and mix well. Now add sprouts and cook for about 2-3 minutes. Garnish it with coriander leaves and serve hot !!!
