Tomato Rice

Are You the one don't like to waste food ?  To avoid food wastage one should find smart ways to use up leftovers. Its not practical to cook perfect amount of food every time. Refrigerating the food and eating the same will be quite boring. Leftovers are very common these days.
If you have leftover rice, no need to worry. Tomato rice is one of the simplest dish which you and your kids will love eating. Its a quick pick recipe every one should try.

Ingredients

Tomato puree 1 cup
Leftover rice
onions(chopped) 1
green chilies (chopped)
ginger garlic paste 1/2 tbsp
soaked urad dal
soaked chana dal
cashew nuts 5-6
curry leaves
red chili powder 1/2 tbsp
turmeric powder 1/4 tbsp
dhaniya powder 1/2 tbsp
garam masala 1/2 tbsp
salt & sugar

Directions

Heat oil in a pan, add mustard seeds, curry leaves, ginger garlic paste and onions. Fry till the onion becomes pink. Now add cashew nuts and soaked urad chana dal. Later add tomato puree and saute well. Add red chili powder, garam masala, dhaniya powder, salt and sugar. Instead of sugar you can also add tamarind chutney.
Now add leftover rice and mix well. Serve hot !!!!
