Mirchi Vada (chili cutlet) also known as Mirchi Bhaje, Mirchi Bhajia is a spicy Indian snack consisting of chili (Mirchi) and potato stuffing, served hot with tomato sauce or occasionally with mint and tamarind chutney. Ingredients for stuffing Boiled potatoes (mashed) chopped onions chaat masala green chilies cumin seed turmeric powder saunf red chili powder dried mango powder salt oil/butter for vada 5-8 large green peppers/ badi hari mirch 1 cup besan red chili powder cumin seeds ajwain / celery salt Directions Take oil in a pan and add cumin seeds, green chilies and onions(finely chopped). fry till golden pink. Add saunf , turmeric powder, red chili powder and mashed potatoes. Mix well. Later add salt and dried mango powder. Wash and wipe the peppers, slit lenghtwise and de-seed it. Fill the potato stuffing. Mix the besan with salt and enough amount of water and all the spices (listed below vada) . Heat the oil and check

Urad dal Kachori

Kachori is a spicy snack from the Indian subcontinent; popular in India.. Ingredients Required : Urad dal 2 cup Green chilies ginger garlic paste heeng / asafoetida saunf cumin seeds red chili powder chaat masala wheat flour oil Directions Wash and soak the urad dal for overnight . Drain and Grind coarsely. Take a pan and add 3 tbsp oil. Add heeng, cuminseeds, green chilies (chopped), saunf and urad dal mixture. Stir well (the mixture will be sticky ) Add salt to taste and mix again. When the mixture starts to become pink, take off the heat. knead the floor (wheat) with 3 tbsp of oil and water to make a stiff dough. Keep aside for 10 minutes. Make a small ball of the dough, flatten slightly and add the stuffing(1 tbsp). Shape into a ball and roll it. Heat oil and fry the kachori till crisp and golden. Serve hot with aaloo sabji / pickle / chutney !!

English Chaat

The chaat variants are all based on fried dough, with various other ingredients. The original chaat is a mixture of potato pieces, crisp fried bread dahi vada or dahi bhalla, gram or chickpeas and tangy-salty spices, with sour home-made Indian chilly, fresh green coriander leaves and yogurt for garnish, but other popular variants included aloo tikkis or samosa (garnished with onion, coriander, hot spices and a dash of curd), bhel puri, dahi puri, panipuri, dahi vada, papri chaat, and sev puri. There are common elements among these variants including dahi, or yogurt; chopped onions and coriander; Sev (thin dried yellow salty noodles); and chaat masala, typically consisting of amchoor (dried mango powder), cumin, Kala Namak (rock salt), coriander, dried ginger, salt, black pepper, and red pepper.
